It’s a chilly Tuesday night and amidst all the boxes for packing up our home we are craving comfort foods. Although most comfort foods can take FOREVER in the kitchen. With the help of Progresso, tonight we are cooking up a quick version of Chicken & Dumplings. Because comfort food can be for a weeknight meal, too!

Weeknight Chicken & Dumplings
Serves 6 hearty portions
- 2 Tbsp unsalted butterImage may be NSFW.
Clik here to view. - 1/2 large onion, chopped
- 2 medium carrots, chopped
- 2 medium celery stalks, chopped
- 5 chicken thighs, skinless & boneless
- 1 box Progresso Cooking Stock
- 2 bay leaves
- 1/4 tsp ground black pepper
- Salt to taste
Dumplings
- 2 cups all purpose flourImage may be NSFW.
Clik here to view. - 1 cup whole wheat pastry flour
- 5 tsp baking powder
- 1/3 cup chopped parsley
- 1 Tbsp chopped thyme leaves
- 1/4 cup butter
- 1 cup milk
- 1 egg
Directions:
- In a heavy dutch oven or stock pot melt 2 Tbsp butter and add in carrots, onion and
celery and sauté for 5 minutes. Add in chicken thighs and cook on each side for 1 minute. Top with Progresso Cooking Stock and bay leaves. Bring to a boil over medium high heat, then reduce to simmer for 30 minutes. - Meanwhile, in a mixing bowl, mix together dry (flours, baking powder, and herbs) ingredients with butter using a pastry blender (or do it with your fingers creating pea sized crumbs of butter with the flour). Next, add in liquid ingredients (egg & milk), don’t over mix, just until combined.
- While in the pot shred chicken with tongs and a fork. Add in pepper and season with salt as desired. (We omit due to baby enjoying this with us!)
- Drop spoonfuls of dumpling dough into simmering stock. Cover and cook on low for 15 minutes. Top with fresh parsley and you’re set to please the entire family with this comfort dish!

Using the stock is what makes this dish flavorful without having to cook all day. The chicken thighs are full of flavor and don’t dry out, making them perfect for a quick weeknight soup. We bump up the veggies, because we enjoy having a bit more to the sauce and yes, the dumplings are LOADED! I like dumplings, and not the silly strips of dough some folks use–we prefer the biscuit variety in our home. Adding in fresh herbs also boosts not only the flavor of the biscuits, but also the nutrition! Don’t discount parsley…it’s a nutrient-loaded green, too!
